Happy Friday, everyone, Here is some funk.
Funk is good on a cold Friday
I prefer this boiled Salad Dressing to Mayonnaise.
In my recipe file it is just listed as Mother’s Boiled Salad Dressing
When I looked in her recipe box it is labeled Mother’s Boiled Salad Dressing. (And it was likely so labelled in Grandma’s recipe box too.
3/4 Cup Vinegar
3/4 Cup Water
2/3 Cup Sugar
2 Tbsp flour (heaping)
1 tsp mustard
1/2 tsp salt.
2 lightly beaten eggs.
Heat water and vinegar in a small saucepan
Mix the dry ingredients and add the beaten eggs Add the hot water and vinegar and cook over low heat until thickened about 5 minutes.
Keeps in the fridge for over a month.
Note: this is an adaptable recipe, works if the sugar is changed out for sugar substitute, if the fresh eggs are replaced by fake eggs, if the wheaten flour is replaced by non–gluten flour. It can also easily be made in the microwave in a glass bowl and water heated in a Pyrex measuring cup.
